Nothing tastes better than fresh buns out of the oven ! Just the aroma in the house starts your tastebuds to anticipate something really delicious!
Here are some tips for perfect buns - everytime!
Note: I have repalced few of the ingredients listed to make it even more healthier.
Ingredients:
  • Instant yeast-2tsp
  • Warm milk-1cup
  • Sugar-1tsp
  • Eggs-2(optional). Eggs may be replaced by milk.
  • Low fat melted butter-2tbsp
  • Salt-1tsp
  • all purpose flour(maida)-4cups[for a healthier version,replace by whole wheat flour]
  • Kasoori methi-2tbsp(optional)
  • Egg-1,for egg wash(optional)
  • Any Mix vegetable/meat filling-as required(I sauted onions and added all possible veggies ,salt and small chicken cubes.Finally adding spices like chilli powder,pepper powder,jeera(cumin) powder and garam masala)

Mix the yeast,milk and sugar together.Let it rest for 15mins.
 Add beaten eggs and melted butter to this and mix well.
In a separate bowl,mix the flour,kasoori methi and salt together.
Slowly add the yeast mixture to the flour,forming a soft dough.Add a little warm milk if the dough appears to be getting hard.
Knead well for 10 mins.
Cover with a moist kitchen towel and let it rest for an hour.
The dough becomes double its size now.
Punch out the air from the dough and let it rest for 10 more minutes.
Now form equal sized balls from the dough(a little smaller than a tennis ball size)
Flatten each ball on the working surface and place the filling and on it and gently form buns of required shape.
Finally brush the buns with beaten eggs.Make -cross marks with knife over the buns.
Cover the tray with a moist cloth and let the buns rest for 20 mins.
Preheat oven at 225°C
Bake for 15-20mins  till golden brown.
 Cool and serve.
 I made the chocolate version of it too by adding nutella/chocolate spread as the filling.It was absolutely divine.

Today was one of the days when my husband was really hungry after office.I had nothing but brown bread in my refrigerator.The same old boring French toast was a no no for sure.I wanted to make something I had never made before.
There I was, mixing ingredients as they crossed my mind.and Lo...my Invention-The Desi Toast was ready in minutes.
It was an instant hit ! So much that my husband asked me to pack them for lunch the next day too!


Here is the list of Ingredients that I recollected later
  • Brown/White bread slices-6 large
  • Eggs-3
  • Milk-1/2 cup
  • Red chilli powder-1/4 tsp
  • Pepper powder-1/4tsp
  • Ginger garlic paste-1/4tsp
  • Gram flour(besan)-2tbsp
  • Baking soda-a pinch
  • Bread crumbs-3tbsp
  • Salt-to taste
  • Oil-to shallow fry

 Method:
Cut the bread slices into two(rectangular or triangular).This way the pieces get crispier.
Beat eggs well till frothy.
Add the remaining ingredients except the bread crumbs and mix well.

Finally just before frying,add the bread crumbs
The gram flour binds everything together and the crumbs add crunchiness to the toast.
Add enough water so that it reaches the right consistancy( a little thicker than beaten eggs consistancy) 
Heat oil in a pan to shallow fry.
Dip each piece into the batter.Both sides of the bread needs to be coated well.
Immediately fry them.keeping the bread longer in the batter will tend to make the bread soggy and in turn break it.
Fry well on both sides on medium heat till golden brown.

Drain on paper towels.
Serve hot with ketchup.

Note:
While dipping into the batter to fry the next round of toasts,add a little water as the crumbs would have absorbed most of the water and the batter becomes a lot more thicker
Those counting on calories can replace egg yolks with more egg whites and go easy on the oil used.

Bhaturas are crisp on the outside and spongy within.Unlike pooris, Bhaturas are elongated in shape and the dough is allowed to ferment for 4-5 hrs before rolling out the Bhaturas.Even when cold,they dont get rubbery,and are as tasty.
Ideally Chole Bhature is the perfect combo.If accompanied by achaar, you could have it with practically any veg side dish.
I shall share the chole recipe in my next post.
So here is the recipe for the Bhaturas...

Ingredients for the Bhaturas:
  •  2 cups all-purpose flour(maida)
  • 1/2 tsp baking powder
  • 1 cup yoghurt
  • 3/4 tsp salt
  • Oil for deep frying
Method:

Mix the ingredients together and knead with water till a uniform dough is formed.
Cover and let it rise for 4-5 hours.
Knead again till the dough is smooth.
Divide the dough into equal lemon sized balls.
Heat oil  in a large, deep pan, on medium high.
Flour a clean, dry rolling surface and place one ball on it. Roll out into a 6" elongated shaped bhatura(you could even roll it out in a circular shape)
 To test if the oil is hot, drop a small ball of dough into it. If the ball quickly rises to the surface oil the oil and sizzles, the oil is ready.
Add a rolled-out Bhatura to it gently.
In few seconds, turn gently with a slotted spoon. Wait few more seconds and press gently in the center of the Bhatura with the slotted spoon. This will make it  puff up. Keep frying and turning gently till both sides are golden.

Drain on paper towels.
Serve hot.


ShareThis is the recipe for the garlic bread that I had made to accompany the grilled chicken recipe in my previous post.Trust me,it's really simple and turns out as good as any of the freshly baked store bought garlic breads.

Ingredients:
1 baguette
5 cloves of garlic
200 g low fat butter
3 tbsp parsley, chopped
salt and pepper

Method:
For the garlic butter :
Spoon the butter into a small bowl. Place some of the garlic cloves into the crusher, squeeze the handle tightly down and scrape off the crushed garlic into the bowl. Continue this process until all the garlic has been crushed. Next, pour in the parsley, season with salt and pepper and stir well.

Place the baguette onto the chopping board and cut across diagonally, into 2-3 cm slices, without cutting completely through the bread. Create a gap between the slices, add a dollop of the garlic butter, and smooth it down. Finally spread any remaining butter over the top of the baguette.

Unroll the aluminium foil and tear off a large enough piece to wrap the baguette. Place the garlic bread into the centre of the foil and wrap it up making sure that you seal the ends well.

Preheat the oven to 180 degrees
Place the baguette into the centre of the oven and cook for ten minutes. Turn it over, cook for another 10 minutes and remove it from the oven.

Once cooked, unwrap the baguette, cut into slices and serve.
